Pairing:  This assemblage wine loves grilled dishes, as the nature of the meat mirrors the bitter edge of the tannin in the wine. Serve at 16-18°C (60-64°F).

Tasting notes:

Colour: Dressed with a dark ruby red colour with a purple border.
Aromas: On the nose, this wine is complex and intense, with Cabernet Sauvignon distinctive notes of plum, black currant, spices, vanilla, black pepper, cedar and snuff.
Palate: The palate opens up with sweet ripe fruit flavours like cherry, very well integrated with the wood and earthy notes. It is a full body wine, with excellent balance, harmony and long finish.

Reference value – Case of 9 litres – equivalent to 12 bottles of  750 cc.

D.O.N. is an acronym of the Spanish language sentence “De Origen Noble” which means: Of Noble Origin. The brand was chosen to express the origin of the best grapes of noble French varieties planted on the vineyards of Santa Helena Vineyards selected to produce this wine, an icon representative of the outstanding care on the viticulture and winemaking.

During the 2009/2010 season, the weather from where the grapes for the wine D.O.N. come from, was cooler than normal and the year was free of rainfall. The season started with a balanced growth of the vineyard, thanks to a cool spring. Bloom came a week later than normal and fruit set was abundant, especially in Cabernet Sauvignon. Thanks to this, the berry size was smaller, whereby a greater colour and best texture was obtained.

The vigour of the plants was regulated with a lower contribution of irrigation product also lower water demand of a cooler summer. The veraison (the onset of ripening, originally a French term (véraison) but has been adopted into English use to express the moment when ripening starts and the grape berries change from the green of inmaturity to the maturity colour) began in early January. Maturity came in April, a week later than in a normal year. It is always surprising how freshness and a wide range of flavours are developed in the grapes thanks to colder weather. This has happened in all varieties and therefore, the qualitative outcome of the Bicentennial Harvest in Chile, was extraordinary. D.O.N. is a 100% free of animal ingredients.
