Aging: 15 months in French oak barrels.

Pairing:  A brilliant wine, constant and precise in its character, all in finesse and harmony, a new and particular Alto Maipo Valley style. Ideal wine to pair with red meats, strong sauces or very spicy, also with Emmental cheese, Provolone, or Manchego cheese. Serve at 16-18°C (60-68°F).

Colour: Deep ruby red colour.

Aromas: A wine with aromatic complexity. A heightened expression of Cabernet Sauvignon fruit.

Palate: Highly concentrated wine, persistent on the palate. Fresh Cabernet Sauvignon, with smooth, fine, and delicate tannins and excellent balance.

Reference value – Case of 9 litres – equivalent to 12 bottles of  750 cc.

R.I.P. Ícono Cabernet Sauvignon is Chile’s first icon wine grown at 1,240 m.a.s.l. which has received the highest evaluation and recognition from reputed wine judges since the very beginning. This confirms R.I.P. Ícono Cabernet Sauvignon as one of the maximum representatives of Cabernet Sauvignon within the Alto Maipo Valley, as Chile’s finest origin for producing this variety.

Vineyard

The R.I.P. Ícono vineyard is situated at the foot of the Andes Mountains on the northern bank of the Maipo River at 1,240 m.a.s.l., the vineyard covers 0,5 hectares, 100% of them planted to Cabernet Sauvignon. The vines in the vineyard are all of an early age.

Plantation year & density

The vineyard (100%): 3,000 plants/hectare and there are only half an hectare.

Soil

The first 30 cm of soil is loam with a large amount of stones below that. These soils ensure good drainage and low fertility, which helps restrict the plants’ vegetative growth and encourages the accumulation and maturation of phenolic compounds.

Climate

A semi-arid Mediterranean climate with an average rainfall of 350 mm per year is the characteristic climate of the Alto Maipo Valley. It is planted in one of the coldest sectors of the Alto Maipo Valley. This season was the coldest in the short history of R.I.P., and this, along with harvesting 10 days later than usual, allowed the grapes to ripen slowly and reach the end of the season with exceptionally well-ripened tannins along with very good fruit expression, freshness, and personality.
