Pairing: This wine is a perfect companion for red meats, poultry, duck and aged cheeses. It’s an excellent option to serve next to Easter Island tuna fish, sushi and risottos. Cheese-wise, try Brie, Gruyère or Port Salut. Serve at 12-14°C (54-58°F).

Colour: A beautifully intense ruby red colour.
Aromas: This icon Pinot Noir has a complex, yet delicate nose, displaying black fruit and white flower aromas with violet notes that combine harmonically with sweet spices and chocolate.
Palate: The richly textured palate shows intense sweet fruit and elegant, concentrated flavours. This amazing wine has delicate tannins, a great structure and a rich and long lasting finish.

Ocio is life itself condensed in a moment, a moment worthy of this oenological epiphany: Ocio, Cono Sur’s icon wine and Chile’s first ultra-premium Pinot Noir. Cono Sur was born around the oldest Pinot Noir vineyards in Chile being the first to produce Premium Pinot Noir in the country, and also the first to export wines coming from grapes of the variety. Producing Pinot Noir has been Cono Sur’s most exciting challenge. The “Pinot Noir project” started in 1999, with the aim of producing the best Pinot Noir in Chile: unique, expressive and proud of its New World roots, while vinified according to the Burgundian tradition. From this very same Burgundian French D.O., Bourgogne (AOC), comes Martin Prieur, an experienced Pinot Noir winemaker who has helped Cono Sur winemaking team to select Chilean terroirs and advised on optimum vineyard management. Cono Sur Pinot Noir grapes are harvested by hand, and after passing through the selection table, bunches are then destemmed, taking care not to crush the grapes. The fruit is then placed into open-top tanks where it undergoes carbonic maceration at low temperatures. Later, the grapes are foot-trodden and colour extraction is enhanced by means of manual cap immersion. After fermentation, the wine is placed in new French oak barrels, where it ages for 14 months.
