Carmenère is a late maturing variety that requires hot and sunny days during the ripening season. For this reason, Aresti’s Carménèrecrop grows in warm zones, in specifically selected areas of Chile’s central valley. This variety is harvested by mid May. Grapes were gently threshed and crushed. Afterwards, fermentation takes place in stainless steel tanks for 8 days at 27 to 28 º C. After fermentation, the delicate process of wine ripening begins, part of which keeps wood contact. With this process, it is possible to achieve a nice balance between fruits and oak notes. This Carménère has a deep and intense colour, with sweet aromas of candy and notes of cinnamon. In mouth it’s juicy and sweet, with a good balance and medium body.

Tasting notes:
Colour: Ruby red colour, with black cherry highlights and numerous slighty slow legs.
Aromas: Intense nose of berries, such as cherry, and black fruit notes like plum, quince and walnut, with smoked notes and spices like cumin, cardamom and tarragon.
Palate: soft and pleasant attack on the mouth, a half full palate without being exuberant. Good alcoholic balance and a soft, half long finish, without being rough.
