Pairing:  Encierra is a brilliant assemblage wine, constant and precise in its character, all in finesse and harmony, to be pair with beef, poultry, spicy food or lamb and strong cheeses with the intensity that comes from blue cheeses and other moldy cheeses. Serve at 16-18°C (60-68°F).

Tasting notes:

Colour: Encierra assemblage is a dark ruby red wine with purple hues.
Aromas: The nose, elegant and layered with concentrated aromas of black fruit and blueberry and spicy and balsamic notes.
Palate: The taste is velvety, it is a full-bodied wine, dense, very fruity and with persistent aftertaste.

Encierra is a typical product of the location; a wine that collects all the benefits of the terroir of the property the Eyzaguirre Echeñique family owns in the Colchagua Valley. The objective for the family is to follow the tradition and convey Encierra to become one of the best wines in Chile. The production of this Encierra assemblage reaches the amount of 24,000 bottles, which are mainly commercialized in Europe, United States, Asia and Brazil. Encierra is also present in Chile’s local market, in some few specialized wine stores.

Diverse soils with different kind of stones along the hill slopes of the Coastal Mountain Range. The deep sedimentary soil of the Colchagua Valley contains a mixture of fine-textured volcanic soil in the foothills. This type of soil is quite developed and responsible for the attainment of such particular grapes, concentrated and with elegant fruitiness.
