Botalcura El Delirio Reserva Syrah Nebbiolo is a 70% Syrah and 30% Nebbiolo varieties from Maule Valley and has an alcoholic content of 13.0º a pH of 3.47, a total acidity of 5.86 g/l and a residual sugar of 2.78 g/l. The berries of this Merlot grapes variety grown at a mild cold temperature climate, but with the contrast of warm days with cool evenings producing a benefitial difference of temperature between day and night. Clusters were hand-picked into half-ton bins and the cluster selection was perform on the vine, with leaf removal prior to vintage. Harvested only in the early morning hours to keep the fruits cool. The vines from where the grapes for this wine come from are planted over alluvial origin soils, on stony, clayish and sandy river beds. Syrah vines are planted on stratified and gently rolling hillsides, stratified and slightly undulated, of medium depth and loamy texture good drainage and low vigour while Nebbiolo grows on sandy clay on the plain. During vinification the grapes from harvest were destemmed, soft crushed and carefully managed in order to protect them from oxidation. Winemaking was done at a controlled temperature of 25°C. The clusters were crushed carefully and then a cool pre-fermentation maceration was given in the stainless steel tanks at 59ºF (15ºC) for three days. Post-fermentation maceration was given for about two weeks and fining was done by press fractions based on constant tasting, with no “press wine” included in the blend.

Pairing: This wine will pleasantly accompany a hearty beef and vegetables or oxtail stews. It also goes very well with roasted duck breast and other dishes with intense flavors. Serve at 18º (C64ºF).
Tasting notes
Appearance: Intense ruby red, with purple highlights.
Aromas: Potent and elegant, with a predominance of red fruits like cherries, as well as yellow plums and herbs and spices such as cilantro, fennel, and cardamom accompanied by notes of toasted oak.
Palate: Straightforward attack with a mid-palate that is nicely sustained by a combination of acidity and tannins that provides good structure and balances the wine´s tremendous volume. The finish is long and persistent with toasted flavors. This blend shows the potency of Nebbiolo with the exotic nature of the Syrah full of spices. It has an intense color that harmonizes with the tannic strength and the fruity flavors of the Nebbiolo. This interesting and bold combination is heightened by its aging in French and American oak barrels, which lends elegance and complexity to the blend. Stored properly, this wine will come into its maximum expression within 5 years, although it will continue to develop elegance for 10 years or more.
