The Botalcura Codorniz Merlot is a 85% Merlot, 10% Carménère and 5% Syrah varieties from Maule Valley and has an alcoholic content of 13.0º a pH of 3.57, a total acidity of 4.68 g/l and a residual sugar of 2.67 g/l. The berries of the Merlot, Carménère and Syrah grapes varieties grown at a mild cold temperature climate and were hand-picked during harvest. The vines from where the grapes for this wine come from are planted over alluvial origin soils, on stony, clayish and sandy river beds. During vinification the grapes from harvest were destemmed, soft crushed and carefully managed in order to protect them from oxidation. Winemaking was done at a controlled temperature of 25°C. Pressing was performing after the alcoholic fermentation at low temperature, its maceration lies according to taste.

Tasting notes:
Colour: Semi intense red ruby colour, with black cherry highlights; with numerous semi-slow legs.
Aromas: Intense nose of berries, such as cherry, and black fruit notes like plum, quince and walnut, with smoked notes and spices like cumin, cardamom and tarragon.
Palate: soft and pleasant attack on the mouth, a half full palate without being exuberant. Good alcoholic balance and a soft, half long finish, without being rough.
