The Botalcura Codorniz Cabernet Sauvignon is a 85% Cabernet Sauvignon, 10% Carménère and 5% Syrah varieties from Maule Valley and has an alcoholic content of 13.0º a pH of 3.53, a total acidity of 4.94 g/l and a residual sugar of 2.65 g/l. The berries of the Cabernet Sauvignon as well as the Carménère and the Syrah grapes variety grown at a mild cold temperature climate and were hand-picked during harvest. The vines from where the grapes for this wine come from are planted over alluvial origin soils, on stony, clayish and sandy river beds. During vinification the grapes from harvest were destemmed, soft crushed and carefully managed in order to protect them from oxidation. Winemaking was done at a controlled temperature of 25°C. Pressing was performing after the alcoholic fermentation at low temperature, its maceration lies according to taste.

Tasting notes
Colour: Intense ruby red with violet highlights, with slow and numerous legs.
Aromas: Intense aromas of berries, cherry and dry fig; spices such as nutmeg, with toasted notes of coffee, black olive and boldo [Peumus boldus, natively endemic to the central region of Chile].
Palate: Firm and pleasant entry to the half palate with a good balance. It has a persistent ending and a pleasant bitterness.
