Pairing:  This remarkable País varietal wine loves grilled dishes, as the nature of the meat mirrors the bitter edge of the tannin in the wine. Serve at 16-18°C (60-64°F).

Tasting notes:

Colour: Dressed with a bright and lively red colour.
Aromas: On the nose, this wine is complex and intense, its shows fresh fruits such as sweet and sour cherries, white strawberries and some earthy notes, that characterize this País varietal wine.
Palate: The palate opens up to flavours of mixed red fruits, it is a fresh wine, smooth and juicy, with good balance and freshness, balanced acidity, marked by fine grain tannins that give a very unique structure that dominates the mid-palate.

The Ayllu wine produced by Juan Espíndola and family was produced for the first time in 2011, being obtained from the strain País that in the history of the town was introduced by the conquerors in the 16th century. Ayllu is a very correct red wine of soft coloration, and of good tannin characteristic of the terroir. The experience of tasting this wine is unique, because it is produced at high altitude, submitted the vine to extreme conditions, with the dryness of the Atacama Desert, scarcity and conditions of low temperature water, extreme thermal amplitude, with high temperature during sunlight and low temperature at nighttime.
