AYMA is a wine with Denomination of origin (D.O.): Maipo Valley, Chile. The harvest has been done manually between the last week of April and the second week of May, seeking maximum potential of varietal aromas and tannins adequate maturity variety. Fermentation: In stainless steel tanks with temperature control, using yeast selected. Maceration work was performed in the first stage cold fermentation alcohol to facilitate the extraction while maintaining a colour body and medium astringency.

Composition: 45% Carménère, 35% Syrah and 20% Cabernet Sauvignon

Aging: 12 months in American and French oak barrels.
Opening: Uncork 40 minutes before in order to enhance expression of varietal aromas.
Pairing: This wine will pair perfectly with red meats, lamb, rabbit, and game meats such as venison or boar that are grilled, roasted, or stewed with a bit of acidity (tomato or wine) or herbs such as rosemary, thyme, and bay leaf. Serve at 16-18°C (61°F-65°F).
Tasting notes:
Colour: Intense garnet red colour.
Aromas: On the nose, elegant aromas of red fruits such as currants and plums. It stresses its spicy note with a subtle note of eucalyptus and cedar.
Palate: A balanced elegant body, Good structure, round and persistent tannins giving it a large volume in mouth.
Reference value – Case of 9 litres – equivalent to 12 bottles of 750 cc.
