Aging: 14 months in French oak barrels.
Pairing: This is a brilliant wine, constant and precise in character, it is all finesse and harmony, a classic Cabernet Sauvignon. It will pair perfectly with red meats, lamb, rabbit, and game meats such as venison or boar that are grilled, roasted, or stewed with a bit of acidity (tomato or wine) or herbs such as rosemary, thyme, and bay leaf. It will be also perfect with most cheeses. Serve at 16-18°C (60-68°F).
Tasting notes:
Colour: Deep red colour.
Aromas: On the nose, the dry fruits, toasted almonds, coffee stand out, along with fruity notes such as cassis, raspberries and strawberries, with spices and notes of smoke, vanilla and Holm oak, from its storage in barrels.
Palate: A balanced elegant body, where the tannins are present and very well mixed in a complex structure which leaves a very well balanced acidic feeling, along with a richly concentrated body, as well as notes and tannins from the time spent in the barrel.
