This Cabernet Franc is made in the style of the Valley of the Loire, using stainless steel tanks. The pre-fermentative cold maceration extended during 5 days at a temperature of 10°C. The fermentation was performing with 3 reassembling a day and 1 dosage during the first half of the fermentation period. 20% of the mixture comes from carbonic maceration. Post-fermentative maceration: 5 to 8 days. Showing fresh aromas of currant and blackberry, this cold-tempered Cabernet Franc expresses maturity and juicy tannins along with spicy notes and violets on the nose. Dense and concentrated in the mouth, the palate is dominated by a brilliant finish. The service temperature to enjoy this wine in fullness, highlighting its attributes, should be 18°C.

It makes also a good pairing with dry cheeses, such as Parmigiano–Reggiano. A classic Cabernet Franc from Casablanca Valley. Serve at 16-18°C (60-68°F).
Tasting notes:
Colour: Deep, dark red colour with a violet hue.
Aromas: The nose is very elegant and complex with notes of spices, blueberries, pencil led, and a touch of red currants and tobacco.
Palate: The mouth-filling palate is deep, concentrated, and underlying tannins with distinct nuances of the terroir. A touch of silt, pencil led and minerals.
