This El perseguidor Malbec Centenario in La Minor was made with the grapes from the recently rediscovered vineyard “Malbec centenario de San Rosendo” which represents the deepest of our convictions. We believe in vines planted in dry-land, deep-rooted vines adapted to their environment. Harvested by hand, the grapes were destemmed in an improved squeezer (Spanish zaranda), by hand, directly on an open winery (Lagar: old stone o wood container where the grape is ground to obtain the must). The grinding of the grape was manual and immediately finished the alcoholic fermentation the wine moved to new barrels of French oak for its malolactic fermentation. After their fermentation the wines were separated into two identical batches and each received the music that was chosen. This is a deep layered wine that overlaps in the nose, black fruit, maqui, boldo and litter, overlap with spicy notes and Cavendish tobacco. In the mouth it is rounding, silky, with a touch of natural acidity that augurs well aging.
