Pairing:  The food pairing possibilities for this  Carménère, start with corn dishes such as Pastel de Choclo (corn and meat pie); Churrasco with Pebre (Grilled Beef Tenderloin with Chilean Cilantro Sauce). Sweet and spicy pork sausages, especially those with fennel, red pepper, and oregano, Salami and cold sliced meats, Bistecca alla Fiorentina as well as Pizza. Ratatouille or a spicy Mediterranean Vegetable Ragout, Roast Duck with Sausage and Lentils, Beef Bourguignon or Cassoulet. Braised short ribs, Rack of Lamb with Rosemary and Garlic, Chile con Carne, Steak au Poivre. Serve at 16-18°C (60-68°F).

Tasting notes:

Colour: Intense red purple colour, brilliant.
Aromas: On the nose ripe red fruits, toffee and soft hints of pepper which are unique to Carménère. This blends perfectly with the toasted aromas, vanilla, plums cocoa and nuts from their aging in French oak barrels.
Palate: The palate is well structured, with ripe and soft tannins with an elegant and long finish.

Peumayen, in Mapuche means ´place of dreams´, is the name of the company winery located in Panquehue along the Aconcagua River. This particular area has agro climatic conditions which allow the production of high quality grapes. Peumayen processes grapes from its own vineyard which were planted in 1998 and make wines from them in the winery that was built in 2002 in the same place. The careful handpicking and via the selection of the best grapes from their vineyards, which are winemaking and worked to obtain excellent wines. Peumayen works on a small scale, in a handcraft and modern style, with enthusiasm and care for the environment. The family vineyard is managed by its owners, who develop all stages, from growing grapes, winemaking and marketing.
