Pairing:  This is a brilliant wine to be pair with beef, poultry, spicy food or lamb. It will be a good companion at lunchtime, to drink it with roasted meat, a classic meatloaf or pasta and vegetables. Serve at 16-18°C (60-68°F).

Tasting notes:

Colour: Garage Cabernet Sauvignon is a vivid dark ruby red wine.
Aromas: Sexy, highly perfumed bouquet of fresh red berries, cherry pit, potpourri and mocha, with hints of black pepper and anise adding complexity.
Palate: Spicy and expansive in the mouth, offering lively cherry and raspberry flavors and intense floral character. Silky tannins add grip and shape to the long, sappy finish.

This wine was mountain grown near San Juan de Pirque in the Maipo valley and farmed with traditional methods. It was allowed to ferment naturally in open-top fermenters, outside of a little help through cold harvest nights with hot water bottles. Caps were punched down by hand and pressing was strictly manual. The wine was barrelled in neutral oak (three or more uses) over two winters.

Lot #37 Cabernet Sauvignon from Alto Maipo is a fruity and fragrant version of Cabernet Sauvignon, with aromas of red fruit, blood and a special citric freshness. The palate is medium-bodied, with ultra-fine tannins, sweet fruit and fresh flavors followed by bitter orange notes that are quite unusual but pleasant.
