The production of this Las Veletas Cabernet Sauvignon – Cabernet Franc wine was the year 2013 with a delayed harvest, starting mid April. Some slight rains during the ripening season helped maintain a cool weather and the fruit’s high acidity. Spring was very cold, and brought heavy frosts which directly influenced the late ripening of the stock. These grapes grow and ripen on vineyards planted on circular shaped terraces, on granite and slate grounds, with northeast exposition, under a strict management of the 20 years old vineyards and then and 12 months aging in French casks.
The grapes for this wine were handpicked in 12 kg crates on the vineyard during from early morning until before noon time. After milling and gravity pouring into stainless steel containers were soaking during alcoholic fermentation for 22-25 days, using native yeasts. The malolactic fermentation is carried out and wine is stored in wooden casks for 12 months, attaining very particular and exclusive enological features.
