Pairing:  The food pairing possibilities for Rosé are almost endless. Try rosé with salad Nicoise or cold grilled vegetables including asparagus. Vegetable, seafood and Valenciana paella all show well with dry rosé. Seafood and fish dishes from anchovies to grilled tuna to grilled shrimp and poached cold or even grilled salmon work extremely well with the more full-bodied and creamy textured rosé wines, especially if accompanied by an aioli or other mayonnaise based sauces. Serve at 8-12°C (47-54°F).

Colour: Cristal clear transparent crimsom red colour.
Aromas: Its intense aroma is reminiscent of sour fruits like cherry, mixed with ripe strawberries.
Palate: The palate has a great balance between the alcohol and acidity, which provides adequate freshness accompanied by a slight sweetness and fruitiness giving it breadth and persistence.

This 85% Carménère and 15% Cabernet Sauvignon rosé wine shows intense aroma reminiscent of sour fruits like cherry, mixed with ripe strawberries. The palate has a harmonious balance between the alcohol and acidity, which provides adequate freshness accompanied by a slight sweetness and fruitiness giving it breadth and persistence. This rosé wine is produced with the skin contact method. The black-skinned Carménère and Cabernet Sauvignon grapes are crushed and the skins are allowed to remain in contact with the juice for a short period, typically one to three days. Afterwards the must is pressed, and the skins are discarded rather than left in contact throughout fermentation (as it is with red wine making).
