Sauvignon Blanc from Las Kuras was 100% hand harvested at night. We began night harvest with the 2009 vintage because it allowed us to enhance the fruit and the freshness of the wine (in addition to saving some cooling energy at the cellar). At this point of the process, we do all we can to preserve the fruit and acidity. Slow and low fermentation temperature, made it in stainless steel tanks. We added 8% of Semillón from our old vines from Apalta vineyard; the result is more complexity in the nose and a rounder mid palate, to produce a wine with a crisp acidity and intense white fruit aromas.
