Several terroirs have been present in the Lapostolle Borobó blend. Las Kuras Vineyard in Cachapoal (Syrah), Apalta Vineyard in Colchagua (Cabernet Sauvignon, Carménère and Merlot) and Atalayas Vineyard in Casablanca (Pinot Noir).the composition of the blend usually is 50% Carménère from Apalta Vineyard; 18% Pinot Noir from Atalayas Vineyard; 16% Merlot from Apalta Vineyard; 13% Syrah from Las Kuras Vineyard and 3% of Petit Verdot from Apalta Vineyard.
Borobó is a hand-crafted and hand-harvested at night, not only to enhance the fruit used to make wine, but also to help reduce the use of energy at the winery, since there is no need for additional cooling in the cellar. The grapes are 100% hand destemmed at Clos Apalta Winery so we maintain complete control of the quality. We fill our French oak tanks by gravity. Then nature does its work, allowing native yeasts that slowly ferment the must into wine with temperature control less than 28°C. Manual pigeages during the fermentation and skin contact is done depending on the variety. We rack the young new wine straight into French oak barrels by gravity. Malolactic fermentation happens in barrels, where the wine stays for 23 months, ageing patiently. The wine is bottled by gravity without any treatment or filtration.
