Limited Release is composed of wines specially selected by the winery winemaker team. A special line, gathering wines of a unique personality and perfect equilibrium product of their slow ripening in French oak barrels. This Cabernet Sauvignon wine comes from the Curicó Valley. The temperate weather of the valley gives acidity to the Cabernet Sauvignon keeping it alive, as fresh fruit with an unbeatable color, providing our wine with complexity. Each hectare yields between 9 and 12 grape tonnes per crop, which usually starts in April to end in May. Harvesting is carried out by hand. Once in the cellar, the fermentation process starts in stainless steel tanks at 25 to 27º C. About 70% of the wine is moved to oak barrels, of different uses, for malolactic fermentation, thus achieving a good balance with the berries. The wine is kept in the barrels for 8 to 10 months.

Pairing: This is the perfect combination for a variety of pastas and meats, including lasagna, ravioli, fettuccini, pork, veal and beef. Try it also with quiches, grilled vegetables and cheddar cheese. Serve at 16-18°C (60-68°F).
Tasting notes:
Colour: Intense red ruby colour with black cherry highlights.
Aromas: Intense nose of red fruit and sweet pepper aromas typical from the Cabernet Sauvignon variety appears.
Palate: The mouthful is well balanced with pleasing acidity and round tannins. Aftertaste is perceived long and delightful with lingering coffee, mocha and strawberry flavours.
