Pairing: A wine that combines with elaborated dishes and spicy sauces; casserole, stew, pork or chicken and ripe chesses. Serve within 3 years at 16-18°C (60-68°F).

Tasting notes:

Colour: dark ruby red with violet highlights, with slow and numerous legs.
Aromas: Intense nose of cassis and blackberry, with dark chocolate, smoked notes and a touch of cilantro, jasmine and mustard seeds.
Palate: Attractive soft mouth, half full palate, with voluminous balance and pleasant tannins, and a long finish with a good bitterness.

The Botalcura Codorniz Carménère is a 85% Carménère variety from Maule Valley and has an alcoholic content of 13.5º a pH of 3.69, a total acidity of 5.33 g/l and a residual sugar of 2.23 g/l. The berries of the Carménère grapes variety grown at a mild cold temperature climate and were hand-picked during harvest. The vines from where the grapes for this wine come from are planted over alluvial origin soils, on stony, clayish and sandy river beds. During vinification the grapes from harvest were destemmed, soft crushed and carefully managed in order to protect them from oxidation. Winemaking was done at a controlled temperature of 25°C. Pressing was performing after the alcoholic fermentation at low temperature, its maceration lies according to taste.
